From Jayne Peace Pyle – This book began as a cookbook for my grandchildren.  They will soon be on their own and I wanted them to have some old family recipes, as well as some fast and easy recipes for their busy lifestyles.  Also, I wanted to leave my grandchildren some of their western-southwestern heritage recipes.  Black beans date back at least 7,000 years when they were a staple in the diet of South America.  The healthy black bean, known as “cowboy caviar,” is being used more widely in recipes all the time, thus the name of this book.
